So, What Exactly Is a Brookie Bar?

Every Brookie Bar starts with a foundation of either a rich brownie or buttery blondie. Then comes the fun part.

Layers of fudge.

Cookie dough.

Snack cakes.

Pop-Tarts.

Ganache.

Fillings.

Crunchy toppings.

And sometimes a little bit of chaos.

Each flavor is built around a specific dessert experience. I don't simply pair a brownie with a chocolate chip cookie and call it a day. Every layer is chosen to create a flavor profile that is over-the-top, indulgent, and impossible to forget.

Our Brookie Bars are cut into generous 3" x 3" squares and packed with layers from top to bottom.

These aren't grab-and-go snack bars.

These are "hide one for later and pretend you forgot about it" bars.

This one is for the serious peanut butter fans.

A peanut butter brownie base layered with Nutter Butters, peanut butter fudge, peanut butter cookie dough, peanut butter chips, and finished with peanut butter ganache.

Cookies & Cream

A rich brownie base topped with Cookies & Cream Pop-Tarts, double chocolate cookie dough, Oreo cream ganache, and plenty of Oreo goodness throughout.

A buttery blondie layered with apple pie filling, caramel apple cookie dough, oat crumble topping, and finished with a sweet vanilla drizzle.

Why The Flavors Keep Changing

One of my favorite things about making Brookie Bars is creating new flavors.

Some flavors are seasonal.

Some are holiday-inspired.

Some are based on childhood favorites.

And some happen because I saw something at the grocery store and immediately thought, "I bet that would be amazing inside a brookie."

That means every market can feature something new and unexpected.
